Roast Potatoes the English Way




British roast potatoes are golden and crunchy on the outside, while perfectly fluffy in the middle. Exquisite for your roast dinner or Christmas luncheon. It is a little extra effort, but honestly, well worth it. For best results, use Yukon Gold potatoes.

Ingredients

1lb potatoes (about 8-10 small potatoes)
1/2c olive oil
Salt to taste

Method

Preheat oven to 400 degrees. Put potatoes in a large pot and cover with water. Simmer with lid on for 5 mins. Drain and shake in a colander to fluff the edges.

Pour oil into a large roasting pan and heat on the stove. Arrange the potatoes in one layer in a roasting pan. (Note: the oil should be sizzling hot when the potatoes go in.) Turn the potatoes til they are evenly coated in oil and roast for 40 mins, turning halfway through cooking.

Drain off the oil and season with salt. Cook for a further 5 mins.
