Apricot & Chestnut Stuffing




Ingredients

1 1/4c dried apricots - cut into 4

2 1/2c water

2 onions - chopped

4 sticks celery - finely chopped

3/4c frozen chestnuts (but any nuts will do) - chopped roughly

1/2c butter

bunch of parsley

2c breadcrumbs

1tbsp thyme leaves

salt and pepper to taste


Method

Simmer apricots, onions, and celery in water. Once it's nice and soft, strain and let cool.

Use half of the butter to gently fry the nuts to a nice brown. Roughly chop parsley leaving off the stems.

Pour breadcrumbs into a large bowl, and add all ingredients along with the remaining butter. Add salt and pepper. Gently mix it all together.

Tip that glorious mix into a baking dish. 


Janet's recipe hack: Get a box of StoveTop stuffing. Leave out the salt and pepper. Add all ingredients to the water before mixing in the breadcrumbs. (I'm just saying).
