CALYPSO MARINADE


·       1 large yellow onion, chopped

·       4 stalks scallion, chopped

·       4 cloves garlic, minced

·       1 to 2 Scotch bonnet peppers, deseeded and chopped

·       2 tsp fresh thyme leaves

·       2 tsp ground allspice 

·       1 tsp ground cinnamon

·       1 tsp ground nutmeg

·       1 tsp black pepper

·       2 tbsp salt

·       2 tbsp brown sugar

·       ¼ cup soy sauce
¼ cup vegetable oi

·       ¼ cup fresh lime juice

·       ½ cup orange juice


 

In a blender or food processor, combine onion, scallion, garlic, Scotch bonnet, thyme, allspice, cinnamon, nutmeg, black pepper, salt, brown sugar, soy sauce, oil, lime juice, and orange juice. Blend into a smooth paste.

 

Place chicken in a large bowl or resealable bag. Pour marinade over the chicken, ensuring every piece is well coated. Marinade 4 hours or overnight. Reserve ½ cup of the marinade.

 

Air-fry at 380° for 20 minutes. Brush on remaining marinade and broil for 3 minutes to glaze. Garnish with pineapple chunks for extra sunshine.
