Simple Almond Cake




1 cup sugar
3 eggs, plus 3 egg whites
1/4 teaspoon salt
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract (optional)
2 1/2 cups almond flour

Glaze (optional)

1 lemon
Powdered sugar for sprinkling

Preheat the oven to 350 degrees. The rack should be in the middle position. Grease the bottom and sides of a 9-inch round cake pan. (Line the bottom with oiled parchment paper so that cake does not stick to the pan.)

In a large bowl, combine the sugar, whole eggs and egg whites, salt, and extract. Whisk vigorously until well combined, about 30 - 45 seconds. The mixture will be slightly frothy and the sugar will not be fully dissolved. Add the almond flour and whisk until incorporated.

Pour the batter into the prepared pan. Bake until deeply browned and the crust feels firm when gently pressed with a finger, 45 - 55 minutes.

Let cool in the pan on a wire rack for 10 minutes.

Glaze:

Mix a couple tablespoons of lemon juice with half a cup of powdered sugar. Keep adding small amounts of powdered sugar until it reaches the desired consistency.

Drizzle over cooled cake.

Serves 6 - or the two people that get there before everyone else.
