Power Muffin
Preheat oven to 400 degrees
1/4c organic flour
1/4 tsp salt
1/4c molasses
1 tblsp baking powder
1 1/4c fat free milk
3c original All Bran
1 egg
1/4c olive oil
1/2c walnuts (pieces)
1c apple sauce
1c medjool dates, chopped
Stir together flour, baking powder, and salt. Set aside.
In large mixing bowl, combine All Bran and milk. Let stand 2 mins or until cereal softens. Add egg, oil, molasses. Beat well. Add flour mixture, stirring only until combined. Add dates, apple sauce, walnuts.
Portion evenly in 12 2 1/2" muffin pan coated with olive oil or butter. Bake at 400 degrees for 20 mins til golden brown. Serve warm.
Store in plastic container in refrigerator. To reheat - microwave muffin for 25 secs.
