CC Spicy Garlic Grilled Pork Medallions



2 lb boneless pork tenderloin
2 tblsp Adams Reserve: Jerk Rub
1 jar TX on the Plate: Soppin' Sauce
2-4 tblsp San Carlos: Serrano Sauce

Slice tenderloin into medallions.
Turn tenderloin side. ways andslice into rounds.
Rub tenderloin with Adams Rub.
Place into a large zip lock and add 1/2 of Soppin Sauce and hot sauce.
Mix together coating every piece.
Preheat grill 10-15 mins. Remove pork from marinade.
Top with extra rub if desired.
Place medallions onto well oiled grill grates.
Or place tenderloin into pan and sear each side until golden to dark brown.
Cook 5-7 mins per side.
Test pork for temperature in the range of 150-160 degrees.
Last few minutes baste with the remainder of Soppin' Sauce.
